This is easy to make and it's a great treat. Its probably even less calories using the xylitol and it's better for you and your blood sugar. Enjoy!
1 c all purpose flour
1/2 c whole wheat or whole wheat pastry flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
dash of nutmeg
2 slightly beaten egg whites
1 cup mashed, fully ripe banana
3/4 c sugar (or 2/3 c xylitol)
1/4 c cooking oil
3/4 tsp vanilla
1)In a large bowl stir together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
2)In a medium bowl stir together the egg whites, banana, sugar, oil, and vanilla. Make a well in the dry mixture and add the banana mixture, stirring just until moistened.
3)Spray a 8x4x2in loaf pan with nonstick coating. Spread batter in the prepared pan. Bake in a 350 degree oven for 45 min or until toothpick insterted near the center comes out clean.
4)Cool bread in the pan on wire rack for 10 minutes. Remove from pan; cool completely on rack. Store in a ziplock bag overnight. Makes 1 loaf (16 servings).
